For the rub, combine all ingredients in a glass jar, close the lid and shake to blend. Store the rub at room temperature.
Cut the potatoes into halves or thirds and place in a bowl, drizzle with the olive oil and sprinkle with Spud Rub. Toss to coat. (you wont need to use all the rub)
roast in a fan oven at 220 degrees for 20 minutes or until the potatoes are golden
