  • 500 g Vivaldi Gold potatoes
  • 2 cups flour (gluten-free flour works well too)
  • 1 1/2 tsp salt
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 3 eggs
  • 1 1/2 cupsbuttermilk
  • 1/2 cup parmesan
  • 100 g melted butter
  • crispy bacon, slow-roasted tomatoes to serve

Spicy mayo

  • 1 cup good-quality mayonnaise
  • 1 tsp chilli sauce

Directions

Steps

  1. Peel potatoes and place in a pot. Cover with cold water and cook until tender.
  2. Drain potatoes and mash until smooth.
  3. In a large bowl, mix together flour, salt, baking soda and baking powder.
  4. In another bowl, mix together egg yolks, buttermilk, parmesan and melted butter.
  5. Whip egg whites to soft peaks.
  6. Add wet ingredients into the dry flour mixture, then add in the potato.
  7. Gently fold in the egg whites.
  8. Heat a waffle iron and cook approximately ¾ cup of waffle mixture at a time until golden brown.
  9. When all the waffles are cooked, serve with crispy bacon, slow-roasted tomatoes and a good dollop of spicy mayo.
Spicy mayo
  1. Mix together the mayonnaise and chilli sauce until well combined.
