Aunty Maree's Scalloped Potatoes

Ingredients

  • 1 kg Vivaldi potato, boiled, sliced
  • 6 bacon rashers chopped
  • 1 onion chopped
  • 90 g butter melted
  • 3 tbs plain flour
  • 2 cups cheese grated
  • 2 1/4 cups milk warmed
  • 1/4 cup fresh breadcrumbs
  • 1 pinch salt and pepper
  • 1 tbs butter *extra

Directions

  • Place potatoes in a casserole dish.
  • Sauté onion and bacon in melted butter.
  • Stir in flour and cook for several minutes.
  • Gradually stir in the milk and bring to the boil.
  • Add cheese, salt and pepper.
  • Stir until cheese melts and pour over the potatoes.
  • Sprinkle with breadcrumbs and dot with extra butter.
  • Bake at 180C for about 30 minutes.
