Sweet spiced carrot dip

Ingredients

  • 3 large Wilcox carrots, peeled, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 2 teaspoons maple syrup
  • Toasted Turkish bread, to serve

Directions

  • Step 1 Place carrot in a medium saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Cook, uncovered, for 20 minutes or until tender. Drain.
  • Step 2 Place carrot, oil, cinnamon and maple syrup in a food processor. Process until smooth. Transfer to a bowl. Serve with toasted Turkish bread.
