Step 1 Preheat oven to 190C/170C fan forced. Line a baking tray with baking paper.
Step 2 Place carrots on prepared tray. Drizzle with oil and season. Toss to coat and arrange in a single layer. Roast for 15 minutes. Add garlic and gently toss. Roast for another 15 minutes or until tender and golden. Sprinkled with dukkah to serve.
